Marinated Mediterranean Chicken
1 Preserved Lemon
10 Small potatoes
1 Tablespoon of Salt
1 Tablespoon of Lavender
1 Tablespoon of Cumin Powder
1 Tablespoon of Olive Oil
1 Limed Juice
2 Tablespoons of Butter
1 Chicken Broth
1 Tablespoon of Cumin Seeds
1- In a Bowl, mix the Preserved Lemon, Salt, Lavender, Cumin Seeds, Cumin Powder, Olive Oil and Limed juice together.
2- Rub the Chicken in the mixture and leave it in the Refrigerator for 2 hours.
3- Over a low heat, mix together 1 Tablespoon of butter with Chicken Broth and 1 glass of water until it forms a Sauce.
4- In the Cooking dish, put the 2 finely choped onions, put over the Chicken and pour the Sauce over.
5- Preheat the Oven to 350.
6- During the Cooking, always remember to inject the cooking juice with a syringe sauce in the chicken pulpit in order to keep it tender.
7- While the chicken is in the oven, prepare the steamed potatoes.
8- In the stove over a low heat, put butter, add Potatoes and Cumin Seeds.
9- Remove the Chicken after 1 Hour from the oven, Serve it with The Potatoes.
