Late, around 24/25 years old. Actually, when I realized that cooking was a good way to communicate with others.
My Grand Father, who was a role model for my whole life, taught me that work, when it is willingly chosen can be fulfilling. He encouraged me in this way. Bernard Ganachaud is the one who inspired me to follow this path. I used to walk by his bakery everyday with such yearning. I then studied bakery, pastry and cooking and gained a couple of diplomas.
2-How did your traveling philosophy influence your Career and your Lifestyle?
Traveling means discovery and curiosity, and this is what I do in my profession.
Every cooking around the world has something to teach even though Asian cuisine and especially Japanese cooking are my main sources of inspiration. I admire Japanese cooking focus and respect for ingredients. They also have an amazing eye and instinct for cooking design. Japanese cuisine is real, and there is no concept of cheating, this is partially what I try to reproduce.
3-What is you Motto in Life? The Word you always live with ?
To be oneself to last. Commitment and moving forward.
4- Could you kindly share with us a recipe that you make at home and that we can share with our readers ?
A simple recipe: the Isidore omelet. 4 eggs, a big peeled potato, a dessert spoon of finely minced onion, a small glass of Porto, a glass of thick dairy cream, salt, pepper, a frying pan with a thick bottom, preheat the frying pan, grate the potato, beat the eggs with a fork, add the finely minced onion, the glass of porto and the dairy cream. Add salt and pepper. Preheat the frying pan in which you have added a spoon of “colza” oil. Pour the contents of the salad bowl, and let it cook approximately 3 to 4 minutes. Turn the Isidore omelet over. Let it cook for about 3 to 4 minutes. To serve with a salad and a pinch of salt. Here you have a good recipe, which isn’t expensive, but could still brighten up your New Year’s Eve.
