Christmas is a great holiday to be spent at home with family and friends around a table of yummy food made with Love and shared with the beloved ones! What is particular about this Day of every year, is that I always find myself getting back to my childhood spirit and feeling so happy to prepare different dishes to cherish my family. My kids are also so excited to join me over the Kitchen; everyone is trying to help…
Our way to spread Love between us and our ritual to spend our Christmas morning.
I will be unable to share with you all the recipes I prepare for this occasion, as my article will be long and boring. But I opted for my great grand mother’s recipes that are now becoming a heritage in our family, and that are passed by generations.
To start, Let me introduce you the Baked green Eggs:
A must on every Christmas kids brunch menu is Baked green eggs;
- 100g roughly chopped baby spinach
- 4 tablespoon of fresh pesto
- 100ml double cream
- 1 tablespoon finely grated Gruyere
- 4 eggs
Start by heating the oven to 200°.
In an ovenproof dish mix spinach, pesto, cream and a bit of salt and pepper.
Make a hollow in the middle of the mixture and break into it your eggs. Bake it for around 10mns in the oven.
My kids love to help me prepare this creamy porridge with spiced apple & cranberry as it’s sweet and contains their favorite fruit; Apple!
- 3 peeled, cored, diced apples
- 200g Cranberry
- 1 teaspoon mixed spice
- 5 tablespoon caster
- 200g porridge oat
- 1L whole milk
- 1 teaspoon vanilla extract
In a pan that contains 100ml water, cook gently your apples until almost soft.
Turn up the heat, add the cranberries, caster and mixed spice and bubble until saucy.
Into a big saucepan; tip the rest of the ingredients, until it boils, stirring constantly and simmer for 5mns until creamy.
Once done, put them in bowls and top them with your fruit mixture, you could also add to it some pomegranate.
A Christmas breakfast will never be complete without having pancakes, and I love adding to them bananas and blueberries, it gives them a special taste.
Those pancakes are with my personal touch!
- 2 cups of all purpose flour
- 2tsp baking soda
- 1 TBSP baking powder, 1/2 tsp salt, 3 eggs
- 2 cups buttermilk
- 4 TBSP melted unsalted butter
- 3/4 cup blueberries
- 2 bananas sliced lengthwise
In a small bowl whisk the first three ingredients.
and in a medium bowl beat the eggs with buttermilk and quickly combine the flour mixture then melted butter and blueberries.
Over a low heat, heat a large skillet and spray it with nonstick cooking spra.
Scoop 1/4 cup of the batter per pancake onto the skillet, and gently in the center lay a banana slice and cook until bubbles appear, flip the pancakes until golden brown.
You can serve it with marble syrup .
